I have dinner with one of my friends pretty often, sometimes a few times in one week... But we always find ourselves making the same old thing, sweet potato. I mean, I love the stuff, can't get enough of it, but sometimes I think I gotta up my game. We decided to go for something a little different, and made stuffed pepper. In my friends case it was stuffed courgette as she doesn't like pepper... Who doesn't like pepper?!
Anyhow, the recipe turned out delicious, so I thought I'd share a really simple how-to recipe.
You will need:
(for 2 people)
- Two large red peppers
- 100g quinoa
- 150ml water
- 8 sun-dried tomatoes
- 1 small red onion
- 1 tsp dried thyme
- One block of feta
- Juice of half a lemon
- Salt and pepper to taste
Instructions:
- Heat oven to 200 degrees
- Cut the top of the pepper off and deseed
- Roast in the oven cut-side-up for 12 minutes. (If you want to do this with courgette, keep in oven for approx. 20 mins)
- Meanwhile, bring quinoa to boil with the water. Once cooked, combine with the remaining ingredients: lemon juice, sun-dried tomatoes, dried thyme, half block of feta and onion.
- Stuff the pepper with the ingredients and crumble remaining feta on top before placing under the grill for approx. 6 minutes.
And enjoy! Super quick and easy, and seriously yummy!!
