Courgette, Feta and Mint Tart

When the weather's been as beautiful as it has been, I'm not one to have a huge dinner. I just want something light. But after a while, salads get a bit same old. And on the occassion father bear isn't around to make us a BBQ (is it just my dad thats possessive over the BBQ?), it's nice to try out something new. 
When we discovered some huge bright yellow courgettes on the kitchen counter, brought home from my dad's friends garden, we wanted to find a yummy recipe to use them in. Low and behold, the courgette, feta and mint tart. Ooh lordy. it's a good'un! 

Ingredients:

1 crushed garlic clove
200g frozen peas, defrosted and drained
Handful of fresh mint, chopped
1 tbsp olive oil (plus extra for greasing)
Half lemon, zested and juiced 
1 tsp honey
300g half thinly sliced courgettes, half grated 
320g ready-rolled puff pastry
1 egg yolk, beaten
200g feta cheese


Instructions:

1. Preheat oven to 200C (fan). Purée garlic, half mint, lemon juice, honey & half tbsp olive oil. 
2. Season with black pepper and mix in the grated courgettes (leave sliced courgettes to one side). 
3. Lay out the puff pastry in dish, making sure the pastry rolls up the sides. 
4. Brush edges of pastry with beaten egg yolk. 
5. Spread a layer of pea mixture onto the pastry, and layer with thinly sliced courgette. Repeat this once more. 
6. Crumble over the remaining mint and feta. Drizzle with olive oil. 
7. Bake in the oven for 20-25 minutes, until golden and courgettes are cooked through. 
I honestly can't recommend this recipe highly enough, I know it will be making a few more appearances for me this summer!
